Hey there! I decided to share one of my favorite recipes ever! Its loads of gooey cheese with scrambled hamburger and onions; all encased in a yummy crispy cornbread. Now if you love spicy food, and I mean hot, then you’ll love the jalapeno peppers on top……but if you’re a wimp like me:D, you can just leave them off all together. It can be a whole meal in itself, but it also goes very good with some good ol’ coleslaw. It was given to my mom years ago, and it has been a favorite ever since. So, without further ado…………

Ingredients for the cornbread batter:
1 cup of cornmeal
1 cup of all-purpose flour
1/2 cup of oil
1 can of cream style corn
1 cup of buttermilk
Ingredients for the layers between:
1 lb. of scrambled hamburger cooked and drained
1 whole onion finely chopped
10 oz. of cheese
(I usually use and assortment of American, cheddar and mozzarella. and I’m also pretty sure I use more than 10 oz…..:) )
3-4 jalapeño peppers sliced
Pre-heat oven to 450 degrees. Mix the cornmeal, four, oil, eggs, corn and buttermilk to make the batter. Pour 1/2 of the batter into a 10 inch Cast Iron Skillet sprayed with non stick spray. Then layer the meat, onion, cheese and top with the remaining batter. Place sliced jalapeno on top of batter. Bake for 50 minutes or until cornbread is set and dark brown.
