This recipe was one of my favorite things to have for supper as a kid. My favorite part has always been the Ritz cracker topping! Yes, you heard that right, I said Ritz crackers! I probably have some of you hooked already with that.:) Seriously though this casserole is so good! It’s very easy, and also a great way to sneak in some veggies with your young ones.

- 3 chicken breasts (you can use the boneless skinless chicken breasts, but I just like the flavor and tenderness of the chicken on the bone.)
- 2 cans of cream of chicken soup
- 8 oz. of sour cream
- 1 can of mixed vegetables(or any veggies you have on hand chopped into little chunks)
- Salt and pepper
- 2 packages of Ritz crackers
- 1/2 cup of butter melted
Pre-heat oven to 400 degrees Fahrenheit. Lightly spray a 9×13 in. baking dish with non-stick spray. Boil , de-bone and shred chicken breast. Spread shredded chicken in the bottom of your baking dish. Mix vegetables, cream of chicken soup and sour cream in a bowl. Spread soup mixture on top of chicken; bake for 30 minutes.
While baking, crush the Ritz crackers and toss them in the melted butter. Top casserole with cracker/butter mixture and bake an additional 15 minutes or until topping brown.
